Analysis of olive oil processing technology

HOME > News
Simple ingredients are processed through a series of steps to become delicious ingredients, each step requiring strict process requirements. How to turn olives into olive oil, the following steps are essential.

1. Harvesting: Process Description: Olive harvesting is a critical initial step in the production process. Olives are typically harvested when they reach the desired level of ripeness, which is characterized by their color and firmness. Hand picking or mechanical shaking are the two primary methods employed. Care is taken to minimize damage to the olives during this stage.

2. Washing and Cleaning: Process Description: The freshly harvested olives are transported to the processing facility where they undergo a thorough washing process. This is essential to remove any foreign matter such as dirt, leaves, or twigs that may have accumulated during harvesting.

3. Crushing and Grinding: Process Description: Once cleaned, the olives are directed to crushing and grinding equipment. This process breaks down the olives into a paste, comprising of pulp, skin, and pits. The consistency of the paste is crucial for efficient extraction.

4. Malaxation: Process Description: The olive paste is then transferred to malaxation tanks. Malaxation is a controlled mixing process that lasts anywhere from 30 minutes to an hour. It allows for the agglomeration of oil droplets, aiding in the extraction process.

5. Centrifugation: Process Description: The malaxed paste is subjected to centrifugal force in a decanter or centrifuge. This separates the olive paste into three components: oil, water, and pomace (solid residue).

6. Oil Separation: Process Description: The centrifuged mixture is further processed in a vertical centrifuge or separator to isolate the oil from the water and pomace. The oil is collected and the remaining water and pomace are directed towards further processing or disposal.

7. Filtration: Process Description: The extracted olive oil undergoes filtration to remove any remaining impurities. This step ensures that the final product is of the highest quality and free from any particulates.

8. Storage and Settling: Process Description: The filtered oil is then stored in stainless steel tanks for a period of settling. During this time, any residual water and impurities settle at the bottom, allowing for the extraction of the clarified oil.

9. Bottling and Packaging: Process Description: The final step involves packaging the extracted olive oil. This may include filtering it once more before it is bottled, capped, and labeled for distribution.

Producing premium olive oil is a meticulous process that demands a deep understanding of the intricacies involved at each stage. By adhering to these detailed processes, producers can ensure a final product that meets the highest standards of quality and taste.
